Sunday Brunch

                                                            

What's your idea of Sunday brunch? Sunday's are meant to be relaxed, comforting, sleeping late and spending quality time with your family. If friends are sleeping over yet to recover from last night's booze party, all the more reason to have a fun-filled brunch tucking into simple yet delectable food, sharing laughs on the dining table. I prefer dishes which are simple and less time consuming as far as prep time is concerned. You can put up anything on the table depending on your mood and choice. Here are few dishes of my choice which I have mostly done on my Sunday's. In most of the recipes shared here, you can have the basics prepared the day before and have a more relaxed meal on Sundays.

Moonma's Chicken-Dill Sandwich

Ingredients: 250gms boneless chicken cut into small cubes, 1/2 cup chopped Dill, 100gms mayonnaise, butter, salt, oil, dried herb seasoning(thyme,oregano,basil), pepper powder, chilli flakes, sandwich bread

Method:
  • Heat oil in a pan and add 4tbspns of oil
  • Once the oil heats up, add the dry herb seasoning
  • Now add the chicken pcs and fry
  • Add pepper powder, salt and cook till it's done
  • Cut bread slices diagonally and chop off the brown portions
  • Butter the bread evenly and keep aside
  • In a bowl, mix cooked chicken, mayonnaise, dill, salt and chilli flakes (as per taste)
  • Fill this chicken mixture in between the bread slices and your sandwich is done
  • You can have it just like that or can choose to grill it

Moonma's Sausage Masala

Ingredients: 250gms sausages of your choice, 1 chopped onion, chilli powder, 1tbspn lemon jiuce, 2tbspn tomato ketchup, salt, oil, coriander leaves for garnishing

Method:
  • Cut the sausages diagonally in small bite like pcs
  • Heat oil in a pan
  • Add the chopped onion and fry lightly
  • Now add in all the other ingredients except sausages and coriander leaves
  • Fry lightly so as to coat the sausages evenly with the masala
  • Garnish with coriander leaves and serve hot



Garlic Bread

Ingredients: 1 French loaf cut into diagonal pcs, 4tbspn butter, 4 crushed garlic pods, 1 cup grated Mozzarella chesse, 1/2 tbspn Oregano, pinch of salt

Method:
  • Rub the bread slices with crushed garlic and keep aside
  • Mix in all the other ingredients in a bowl
  • Spread this mix on your bread slices
  • Pre-heat the oven
  • Bake the slices at 220C for 10 minutes and serve
Note: You can make variations in this recipe, by adding onion/pepper/chilli flakes/green chillies in the cheese mix





Moonma's Quick Spaghetti pasta with garlic-basil and chicken

Ingredients: 200gms Spaghetti pasta cooked as per packet instructions, 1/2 cup basil leaves, 5 garlic pods, chilli flakes(as per taste), 100gms boneless chicken, dry herb seasoning(oregano-thyme-basil), olive oil, grated Parmesan cheese

Method:
  • Once the pasta is cooked, rub 2tbspns of olive oil evenly and keep aside
  • Prepare the chicken as per the sandwich recipe given above and keep aside 
  • In a hot pan, put 3tbspns of olive oil
  • Add the garlic pods and saute till the oil becomes aromatic and then discard the garlic pods
  • Add the basil leaves and saute till they appear to wilt
  • Now add the spaghetti pasta, chilli flakes, salt and saute evrything together for 2-3 minutes
  • Gently fold in the chicken pcs
  • Garnish with grated Parmesan cheese and serve immediately


Cucumber-Yogurt Dip

Ingredients: 250gms thick yogurt, 2 cucumbers skineed, deseeded and grated, salt, sugar, 1 pinch roasted cumin powder

Method:
  • Squeeze excess water from the grated cucumber by pressing it between your palms and keep aside
  • Mix in all the other ingredients except the cumin powder and whisk gently
  • Slowly fold in the grated cucumber and cumin powder
Note: This dip is very refreshing and can be clubbed as a condiment in your brunch



Fritters

Ingredients: Vegetables of your choice cut into long thin strips, boiled egg, 50 gms gram flour, salt, sugar, 1/2 tbspn red chilli powder, 1/2 tbspn turmeric powder, 1 tbspn poppy seeds, oil for frying

Method:
  • Make a batter of gram flour, salt n sugar as per taste, chilli-turmeric powder and poppy seeds
  • Heat oil in a deep kadhai
  • Dip the vegetables in the batter and deep fry
  • Likewise dip the boiled egg(cut into halves) in the batter and fry
  • Serve hot



Moonma's Stuffed Mushroom

Ingredients: 20 mushrooms washed and clean, 2tbspn chilli flakes, 30gms cottage cheese(paneer), salt, 2drops lemon juice, 1/2 cup grated Mozzarella cheese

Method:
  • Gently scoop the middle portion of the mushrooms with the help of a spoon keeping the roundels intact
  • Mix the fresh paneer with chilli flakes, salt, lemon jiuce
  • Fill the mushrooms with this mixture and sprinkle evenly the Mozzarella cheese so as to cover the top
  • Bake the mushrooms at 180C for 5-8 minutes till cheese melt
Note: An easier way to cook the mushrooms is to put little oil on a heated tava, place the mushrooms and cook for 30 seconds. Cover with a lid and cook for another 1 minute.



Caramel Custard

Ingredients: 500ml milk, 2 medium eggs, 2 drops Vanilla essence, 100gms sugar

Method:
  • Boil the milk with almost the entire sugar keeping aside 5tbspns aside
  • Boil the milk till it gets reduced to a quarter
  • Cool the milk and keep aside
  • Whisk only the egg yolks with the cooled milk along with vanilla essence
  • In the meantime pre-heat the oven
  • In a separate pan, caramelize the reserved sugar and dilute with a tbspn of water
  • Put this carmelized sugar on individual moulds that will be used for cooking the pudding. I use Borosil small bowls
  • Fill the mould with egg-milk mixture and place on a rack of hot water
  • Put this rack in the oven for abut 30minutes at 220C
  • Invert the pudding moulds on serving plate and serve chilled



Club your brunch with a lovely smile and some chilled beer to go....
